ROFL! Are the purple all the way through potatoes sweet? There's a Japanese/Asian variety that is purple all the way through, but they are sweet potatoes, like yams. I am most familiar with those, not these Russian blues. I adore rainbow carrots, I grew them one year and some have different colors inside. I also had lamb saag (Indian lamb cooked in fresh spinach) for lunch today because hell yeah, support local small business. And I really want to try your lamb stew recipe this winter, but not now because it's 101F heat index outside (38C) this week and there's no fucking way I'm turning on the oven.

I absolutely adore the purple-all-the-way-through potatoes (and yes, they are purple, not blue), but be careful! I'm sure you know that their liquid is also purple and the staining type. :) But what a marvelous color and taste!

About 15 or so years ago, when I was more ambitious, I grew a crop of purple all the way through potatoes. Slightly earthy flavor. Hosting my siblings and their families for US Thanksgiving dinner, I made a batch of mashed potatoes, which were greyish until the addition of the butter and some sour cream which rendered a lovely lavender color. My oldest brother still doubts they were really "blue" and thinks I added food coloring.

Well, what a glorious tale with an appropriately happy ending! We occasionally have the purple potatoes in Australia too, but the purple tends to turn grey when it’s cooked which makes children grumble (but eat it anyway cuz butter)
